The most underrated recipe I have in mind will always be the humble, classic Bread Pudding. Hence, presenting to you my comfort food of choice, a Berry Bread Pudding. This Berry Bread Pudding is warm, fluffy with a taste similar to custard. I flavoured mine with vanilla and cinnamon for that aroma, alongside berries for a punch of natural sweetness.

I am quite confident to say that Bread Puddings is a common kitchen food across different countries and cultures. This comes as no surprise especially since they are easily customisable and so easy to make. Furthermore, they can even be a good way to use up all that stale bread.

Due to it’s ease of making and versatility, I’ve even made it into two flavours within a single batch. The first flavour is the classic Raspberry Vanilla while the second is Blueberry Dark Chocolate. There wasn’t much additional effort needed on my end, just prepare the toppings! Furthermore, you can already imagine how easy it is to customise these Berry Bread Puddings. For instance, you can even consider the use of fruits such as kiwis and avocadoes.

Then, to the base ingredients including milk, butter and the choice of bread. I would say that any bread works here though I have a biased towards wholemeal bread for it’s better nutrition content. The choice of milk and butter is pretty much up to you, but I made sure to flavour mine with good quality vanilla. Furthermore, cinnamon will also serve as a useful ingredient for that earthy sweet aroma. If you are someone looking for an indulgent treat, consider making more base (milk / butter / egg mixture) for the bread to soak up all that goodness!

Without further ado, the recipe.

Berry Bread Pudding Recipe

This warm and comforting Berry Bread Pudding is a delight to have for breakfast and tea. You can also vary it with different berries!

Ingredients

  • 3/4 Cup or 180ml of Milk
  • 2 Tbspns or 30g of Butter
  • 1 Tsp or 5ml of Vanilla Essence, Vanilla Beans work really well too!
  • 2 Eggs, beaten
  • 2 Tbspns + 1 Tsp or 30g of White Sugar
  • 1/2 Tsp or 2g of Cinnamon
  • 6 Slices of Bread
  • Berries of Choice + Icing Sugar / Other condiments such as melted dark chocolate

Instructions

  1. Warm the milk, butter and vanilla together at low heat until all butter has melted. Set aside to cool.
  2. Separately, mix together the eggs, sugar and cinnamon. Pour the egg mixture into the cooled milk mixture.
  3. Slice your bread into 9 and lay them in your baking tray.
  4. Pour the egg milk mixture over the bread and let it soak for 10 minutes. In the meanwhile, you can add in your toppings such as berries and fruits.
  5.  Bake for about 45 mins at 180C until golden brown. You can place an aluminium foil over the tray if it’s browning too muchNote: I took 25 mins for a small 7 in x 4 in tray, and 45 mins for a 13 in x 4 in tray. Do adjust your timing accordingly depending on how big or small your tray is, feel free to ask if you need help!
  6. After the bread pudding has cooled for 5 – 10 mins, you can add additional toppings such as chocolate, more fruits or a dusting of icing sugar.
  7. Serve and enjoy!
