You can probably figure what a cakesicle is just by it’s name – a combination of cake and popsicle! As such, these Chocolate Coffee Cakesicles need no further explanation except that they are delicious mini coffee cakes in the form of a popsicle, with a generous ratio of chocolate.

My inspiration in making these Chocolate Coffee Cakesicles stem from my recent Red Bean Matcha Popsicles. Although it was a cold dessert, I learnt that the mould is silicone and as such, is able to tolerate the high temperatures involved in baking.

Hence, it was only natural for me to make cakes in these and I had so much fun doing so! Furthermore, I believe there is a lot of potential in these interesting moulds to wow anybody. Afterall, it requires minimal effort except that the cake is now in a more interesting shape.

The making of these is relatively simple. As long as you’ve made a cake in your life, these Chocolate Coffee Cakesicles shouldn’t be much of a hurdle! However, if you’re not confident in making these, feel free to make reference to the video to grasp the steps and consistency of the batter at various points.

Ultimately, only mixing is required and the technique is rather uncomplicated. Then, I also finished these cakesicles in chocolate ganache for a mocha-like finish.

Overall, these Chocolate Coffee Cakesicles are super fun to make and enjoy. I certainly enjoyed myself making these as a fun little baking project though I understand this is not something most would make! Nonetheless, I hope it gives you a baking idea for your bake sales or even to bring your baking up a notch.

Without further ado, the recipe!

Chocolate Coffee Cakesicles Recipe

These Chocolate Coffee Cakesicles are small, fun-sized coffee cakes with a generous ratio of chocolate ganache. Fun to make, fun to eat!

Ingredients (Cakesicle)

  • 1/3 Cup or 80g of Butter, Softened at Room Temp
  • 1/4 Cup or 60g of Granulated White Sugar
  • 2 Large Eggs, approx 55g ea inclusive of weight of shell
  • 1/2 Tsp or 2.5ml of Coffee Flavouring (Optional)
  • 1/4 Tsp or 1.25ml of Vanilla Essence
  • 2 Tbspns or 30ml of Milk, Room Temp
  • 2 Tbspns or 30ml of Coffee, Room Temp (I dissolved 2 tsps of coffee granules in 30ml of hot water)
  • 1/2 Cup or 120g of All-Purpose Flour
  • 1/2 Tsp or 2g of Baking Powder

Ingredients (Chocolate Ganache, click for steps)

  • 1/3 Cup or 80g Heavy Whipping Cream
  • Approx 1/3 Cup or 80g of Dark Chocolate Chips

Instructions

  1. Pre-heat your oven to 160 degrees C and line your baking trays with parchment paper.
  2. Firstly, cream together the softened butter and sugar for a couple of minutes until lighter in colour.
  3. Then, whisk in the 2 eggs.
  4. Mix in the wet ingredients (vanilla, coffee, milk and coffee flavouring) until batter is of a single consistency.
  5. Next, fold in the sifted dry ingredients (flour and baking powder). The batter should be thick.
  6. Fill your mould to be 3/4 full before inserting popsicle / ice cream sticks.
  7. Finally, bake for approx 20 – 24 minutes or until nicely golden brown around the edges. (Note: to adjust according to your mould)
  8. Set aside to cool.
  9. Serve and enjoy, and with chocolate ganache if desired!
