You may have already seen my recipe on my childhood’s Honey Joys (Honey Cornflake Cookies) recipe. Today, I am presenting to you an even simpler, equally delicious childhood recipe – Chocolate Cornflake Clusters. Each serving comes with cornflakes and almonds generously coated with chocolate of your choice. Of course, the almonds is an optional thing, but something that the grown me have came to appreciate.

No surprises here, this is a really easy and foolproof recipe. All you would have to do is to melt your chocolates and to coat the cornflakes and almonds. For myself, I chose to thin out the chocolate with a dash of honey. This combination creates a consistency that is easily spreadable and one that is fragrant with natural sweetness. Furthermore, this combination will retain well at room temperature even after refrigeration for at least a couple of days (if they can last that long).

Additionally, some pointers you would like to consider before starting your recipe includes the choice of chocolate. I would recommend couverture or compound chocolates as they coat and melt well. Therefore and for the same consideration, I will not recommend baking chocolate chips here as they are unable to melt as well. Other options include dark chocolate bars that tend to have higher percentages of cocoa butter.

Then, you can also consider what you would like to serve these cornflakes with. I find the use of chopped almonds a really good touch especially since they add a nuttiness to the finished Chocolate Cornflake Clusters. Furthermore, this adds extra crunch to each of the cluster itself.

Finally, you can consider not to refrigerate them (all melty) or to refrigerate them and serve later. For myself, I chose to refrigerate it to solidify before bringing them out to package and share. I was able to keep them at room temp safely for 2 days through this method. I regret not keeping one aside longer to test how well they remain solidified outside of the refrigerator but I am confident they will do quite well. Please also factor this in when considering your chocolate of choice for these Chocolate Cornflake Clusters.

Without further ado, the recipe!

Chocolate Cornflake Clusters Recipe (No-Bake)

These No-Bake Chocolate Cornflake Clusters are the perfect combination of nolstalgia and indulgence. Easy to make, and extremely delicious!

Ingredients

  • Approx 1 Cup or 200g of Chocolate (Couveture / Compound / Bar)
  • 1 Tbspn or 15g of Honey
  • 2 and 1/2 Cups or 90g of Cornflakes, Lightly Crushed using Hands
  • Approx 1/4 Cup or 30g of Sliced Almonds

Instructions

  1. Before starting, crush your cornflakes just very lightly using your hands. Then, mix in the sliced almonds.
  2. Through a double boiler method (metal bowl above saucepan), melt the chocolate at medium-low heat.
  3. Once the chocolate has melted, mix in the honey unitl it is of a consistency before removing from heat.
  4. Pour the chocolate honey mixture into the cornflake almond mixture. Then, stir well until all of the cornflakes / almonds are well-coated.
  5. Portion the mixture into plastic / paper cups (it may get slightly soggy / sticky with paper) and top off with more almonds.
  6. You can either serve them melty (keeps well for a a few days) or refrigerate them. If refrigerated, remove from fridge and leave out for 20 mins before serving or they might be quite hard.
  7. Serve and enjoy.
