Nothing smells more fragrant than these Cinnamon Brown Sugar Cake Bites! These cake bites come with a fluffy and moist cake based with a lightly crunchy and aromatic cinnamon brown sugar topping. I especially like the topping for how caramelised it tastes, and how pleasant the cinnamon smells. Overall, this cake is perfect for all occasions!
The best part about this recipe in traditional Bakeomaniac fashion is how easy it is. This is a one-bowl recipe and requires simple mixing. Additionally, having a hand mixer will make this much faster though it’s optional. It took me just 10 – 15 minutes to assemble these Cinnamon Brown Sugar Cake Bites, excluding the time for the butter to be softened.
Furthermore, there is potential for you to customise this cake to your liking. For instance, you can top it off with a coffee glaze to balance out the light sweetness of these cake bites. Alternatively, you could even add a sweeter topping. For myself, I foresee that an addition of roasted almonds would be perfect.
Something important to address for these Cinnamon Brown Sugar Cake Bites would be sweetness level. I would say this cake is the right amount of sweetness for me. However, you can explore cutting back sugar by about 20 – 40g. Nonetheless, I suggest giving the topping a try as it will only take up 10 – 15g of brown sugar for an impressive finish!

Cinnamon Brown Sugar Cake Bites Recipe

Bake these delightful Cinnamon Brown Sugar Cake Bites! They make great office snacks, breakfast, and goes well with coffee and tea!
Ingredients
For Cinnamon Brown Sugar Cake Bites:
- 1/2 Cup + 2 Tbspns or 140g Butter, Softened at Room Temp
- 1/2 Cup + 3 Tbspns or 140g Brown Sugar / White Sugar / 50% each (You can cut back to 110g, but cake may be drier)
- 2 Eggs, large, 55g each
- 1 Teaspoon or 5ml of Vanilla Essence
- 1 and 1/4 Cup or 140g of All-Purpose Flour, Sifted
- 1 Tsp or 4g of Baking Powder, Sifted
- 1 – 1.5 Tsp or approx 4g of Ground Cinnamon, Sifted
- Pinch of salt (Optional)
For Cinnamon Brown Sugar Topping:
- 1 Tbspn or 12.5g of Brown Sugar
- 3 Tbspns or approx 20g of Ground Cinnamon
Instructions
- Preheat your oven to 180 degrees C and line your 8 x 8 inches square baking tray with parchment paper.
- Cream together the softened butter and brown sugar together until well incorporated.
- Next, whisk in the two eggs, vanilla, and pinch of salt.
- In a separate bowl, mix the flour, cinnamon, and baking powder separately (dry ingredients).
- Sift and fold in the dry ingredients into the wet batter until a thick, consistency batter is formed. Do not overmix.
- Transfer the batter into the baking tray and tap against counter to dislodge excessive air bubbles.
- Next, mix together the two topping ingredients and scatter over the top of the cake.
- Then, bake for approximately 23 to 26 minutes until cake has risen and is golden brown.
- Set aside the finished cake to cool.
- Serve and enjoy!
