When we talk about comfort food, a dish that will always come to my mind is this Comforting Spinach Tofu Soup. Each spoonful of this soup comes with a clear, flavourful light-brown broth with hints of ginger and a light spiciness from the giner. I added century eggs as well, for a nolstalgic hit!
I would also like to add that this Comforting Spinach Tofu Soup is not just comforting, it is also nourishing for the body. All the ingredients used in this soup have good macronutrients to boost, such as the high protein content of the tofu. Additionally, I added wolfberries that is known in traditional chinese medicine to boost immune system functions and eyesight. Finally, let’s not forget the health benefits of the spinach, garlic and ginger too!
Interestingly, not only is each of these nutritious, they are also nicely fragrant and flavourful. Hence, you also won’t have to add much salt or oil for this Comforting Spinach Tofu Soup. I flavoured this soup with just an additional tablespoon of low sodium soy sauce.
If you’re still holding back on whether to start on this, I would like to assure you that this is foolproof and takes minimal time to prepare! The bulk of this recipe involves boiling and. the prepartion of ingredients to add.

Comforting Spinach Tofu Soup Recipe

Whenever I need a comfort food that is also nourishing, it got to be this easy, extremely nutritious and comforting Spinach Tofu soup!
Ingredients
- Approx 1L of Water
- 4 Garlic Cloves, Crushed
- 3 small Slices of Old Ginger
- 3 Tablespoons of Wolfberries
- 1 Package or approx 250g of Tofu, sliced into Cubes
- 1 Bunch of Water Spinach / Kangkong / Spinach of choice. I separated the leaves from the stems
- 1 – 2 Tablespoons of Light Soy Sauce, to taste
- 2 Century Eggs, Optional
Instructions
- Firstly, bring the water to a boil at high heat. Once it’s boiling, reduce heat to medium-high.
- Secondly, place in the garlic cloves, old ginger and wolfberries and cover the pot for 8 – 10 minutes.
- Then, place in the stems along with the tofu.
- 3 minutes later, place in the spinach leaves to boil for a further 5 minutes. During the last two minutes, you can place in the century eggs if using.
- Season with soy sauce and other condiments as desired. I recommend at least 1 Tbspn of soy sauce or some salt!
- Serve and enjoy!
