There’s nothing more refreshing than a slice of Fresh Pear Cake! Each bite of this fluffy cake comes with a crunchy layer of fresh pears with a slightly sweet and tart fragrance. Furthermore, this Fresh Pear Cake goes really well with coffee or vanilla ice cream and is sure to please!
My inspiration for this Fresh Pear Cake comes from a couple of bruised pears. I thought that it would be such a pity to waste these pears. Furthermore, the pears are good on the inside regardless of the bruise on the outside. As such, I was able to utilise the pears fully and give them a new and delicious lease of life.
Additionally, I was really keen on creating a lighter, fruitier cake just like my Apple Cinnamon Cake. There’s just something so palatable when consuming fruity bakes!
A piece of good news, unsurprising as it may be, is that it is really easy to make this Fresh Pear Cake. The most difficult part of this bake is probably the slicing and preparation of pears. Which, even slices of pear will help to improve the presentation of this cake.
When it comes to preparing the batter, everything is as easy as 1 2 3. Simply make sure to whisk each stage well, and not to overmix after incorporating the dry ingredients. I would also like to share that I’ve used a mixture of cream cheese and butter for the batter. Doing so allows a more tart and less buttery finish, which complements the lightness of this cake.
Finally, you can also consider adding small slices of pear into this Fresh Pear Cake. Here, I merely topped the cake off and I could taste the mild fragrance of pears. However, for bolder and stronger pear flavours, consider incorporating sliced pears in as well!

Fresh Pear Cake Recipe

This delectable and lightly fruity Fresh Pear Cake comes with a fluffy layer of cake topped with slices of pear. Goes well with ice-cream!
Ingredients
- 1/4 Cup or 60g of Butter, Softened at Room Temp
- 1/4 Cup or 60g of Cream Cheese, Softened at Room Temp
- 2 Tbspns + 1/2 Cup or 130g of Granulated White Sugar
- 2 Large Eggs, weighing approx 60g including shell, Room Temperature
- 3 Tbspns + 1 Tsp or 50ml of Milk, Room Temp
- 1 Tsp or 5ml Vanilla Essence (2.5ml if using extract)
- 1 and 1/2 Cup or 180g of All-Purpose / Plain Flour, Sifted
- 1 and 1/2 Tsp or 6g of Baking Powder, Sifted
- 1.5 – 2 Medium-sized pears, sliced and chopped (1.5 if just topping, 2 if incorporating + topping)
Instructions
- Line an 8 inch square baking tray with parchment paper and preheat the oven to 160 degrees C or 300F.
- Cream together butter, cream cheese and sugar.
- Then, whisk in the two eggs.
- Subsequently, mix in the milk and vanilla until the batter is silky.
- Separately, start slicing your pears into 1 – 2 cm slices to top the cake. Additionally, prepare some sliced cubes of pear should you want to incorporate it into the cake directly (this is optional).
- Sift in the baking powder and flour and whisk along with sliced cubes of pears (optional) for a couple of minutes until well-incorporated.
- Transfer the batter into the baking tray and top it off with the remaining slices of pears.
- Then, bake for about 37 – 42 minutes or until a skewer inserted into the middle comes out with only a couple of small crumbs at most.
- Cool for about 30 minutes.
- Serve and enjoy!
