With Ramadan around the corner, I was looking for a treat that is easy and nutritious to make. As such, I decided to bake these Kurma Dates Banana Muffins that make the perfect post-iftar treat.
These Kurma Dates Banana Muffins contain a good source of energy, calcium, and protein. Additionally, I used mashed bananas to provide extra moisture and flavour, while allowing me to add less sugar!
The ingredients you will need to make these Kurma Dates Banana Muffins are pretty straightforward and can be found in your local grocery stores. The more uncommon ingredient here that I am using here is Milk with Dates such as that of Magnolia’s Low Fat Milk with Kurma Dates.
In the evente that you can’t find this flavoured milk or want to omit it altogther, you can opt for the usual milk. However, I used this milk with dates as it adds to both the nutritional and flavour profiles of these muffins!
Additionally, these Kurma Dates Banana Muffins are beginner-friendly too! You will need basic techniques such as whisking, and this recipe comes together in no time. For myself, I made them in less than 40 minutes including the time to bake it.
Furthermore, fret not if you do not have an oven! You can also make these moist and fluffy muffins using an air fryer (timing provided in recipe card below).

Kurma Dates Banana Muffins Recipe

These Kurma Date Banana Muffins are the perfect post-iftar treat. Nutritious, easy to make, and mildly sweet, they are indeed a perfect treat!
Ingredients
- 1/3 Cup or 80g of Unsalted Butter, Melted and Cooled
- 1/3 Cup or 70g of White Sugar
- 1 Cup and 2 Tablespoons or 140g of All-Purpose Flour / Plain Flour
- 1 Large Egg, approx 55g each incl. shell
- 2 Medium Bananas (150g w/o skin/peel)
- 1/2 Cup or 120ml of Milk at Room Temp (You can also use Milk with Kurma Dates)
- 1 Teaspoons or 5ml of Vanilla Essence
- 1 and 1/4 Teaspoons or 5g of Baking Powder
- 1/4 Teaspoon or 1.4g of Table Salt (Optional)
- 1/2 Cup or 90g of Walnuts, Chopped
- 1/2 Cup or approx 50g of Kurma Dates, chopped
Instructions
- Pre-heat your oven to 180 degrees C or 350F and line your muffin tin with paper liners.
- In a large mixing bowl, mix together the butter and sugar until well incorporated (approx. 2 minutes).
- Subsequently, whisk in the egg, salt and vanilla until it is of a single consistency.
- Then, mix in the milk and mashed bananas.
- Fold in the remaining dry ingredients (flour, baking powder, walnuts) until batter is of a single consistency.
- Then, distribute the batter evenly to approx. 10 muffin cups (2/3 full).
- Bake for about 20 – 24 minutes or until golden brown (oven), or 160 degrees C, 16 – 19 minutes (air fryer).
- Serve and enjoy!
