My hunt for savoury bakes came to fruition when I was eating a bowl of Laksa. While eating this, I thought it would be interesting to infuse the flavours of Laksa into cookies, and on some instances I did see some bakers do it before. As such, I decided to give my very own spin on these Laksa Cookies.

These savoury little bites are truly a delight with a great mix of savoury and sweet (just very lightly so). Additionally, I really like how these Laksa Cookies come with a small kick of spice (which you can certainly adjust)! Furthermore, the little green bits you see are intentional. They are laksa or curry leaves which added to the fragrance of these Laksa Cookies.

By the way, for those who do not know, Laksa, a spicy noodle dish popular in Southeast Asia. This noodle dish comes with a rich coconut milk broth that is packed full of flavours and is a must-try!

My favourite part of these Laksa Cookies will definitely be its unique flavour profile. These cookies are a nice fusion between the east (Laksa) and the west (butter cookies). Furthermore, thanks to its unique flavour profile, they attract a lot of interest and are enjoyed by different age groups.

You can feel free to adjust this recipe as deem fit depending on the flavour profile you seek to create. For instance, you can reduce the amount of sugar to create something less sweet and more savoury. Additionally, you can add in more laksa paste or spices to create a stronger kick!

Whether you’re a seasoned baker or a novice who is just starting out baking, you will be glad to hear this: These Laksa Cookies are extremely easy to make. In fact, you won’t need any special equipment beyond a bowl and a spoon.

However, if you would like to alleviate the appearance of these Laksa Cookies, you may need more equipment. This includes a rolling pin and a cookie cutter so as to create shaped cookies. For my batches of Laksa Cookies, I used a flower-shaped cookie cutter to create a nicer finish. Nonetheless, this is subjective and you can make cute little round shaped cookies by rolling too!

Finally, I finished these Laksa Cookies off with an egg wash to create a beautiful golden brown finish (it really gives colours to these cookies)!
