These Crisp Matcha Butter Cookies are buttery, delicate and packed with a noticeable, fragrant matcha flavour. They are lightly sweetened so that the matcha can shine through, while the crisp, crumbly texture makes them especially satisfying with a cup of tea.

Unlike softer matcha cookies where the flavour can sometimes get lot behind chocolate chips, sugar or other mix-ins, these cookies keep things simple. Matcha is main flavour here, complemented only by butter, and a small pinch of salt.

They are also piped before baking, giving them beautiful ridges and an elegant bakery-style appearance. This makes them lovely for gifting, festive cookie boxes or simply enjoying at home.

Why You’ll Love This Recipe

  • Noticeable matcha flavour. This recipe uses enough matcha for its flavour to remain distinct even after baking. The sweetness is kept relatively restrained so that the cookies taste properly of matcha rather than just simply looking green.
  • Crisp and buttery. The cookies bake up crisp and lightly crunchy, with a rich butteriness that balances the slightly bitter and earthy matcha.
  • Beautiful piped appearance. The dough can be piped into swirls, rosettes or other decorative shapes. The ridges remain defined after baking, making the cookies a really attractive gift.
  • Simple ingredients. You only need a few basic ingredients, together with good quality culinary matcha powder.

These crisp Matcha Butter Cookies are buttery, and packed with matcha flavour. An easy piped cookie recipe perfect for tea time and gifting!

Ingredients

  • 1/2 Cup or 115g Unsalted Butter, Softened at Room Temp
  • 1/3 Cup + 2 Tsp or 45g of Icing Sugar, sift if clumpy
  • Pinch of Salt
  • 1 Cup + 1 Tbsp or 130g of Plain Flour, sift if clumpy
  • Approx 1 Tbsp or 10g of Matcha Powder, sifted (or 12g for a bolder flavour)

Instructions

  1. In a large bowl, cream together softened butter, salt and icing sugar until light and fluffy, approx 2 mins.
  2. Fold in the flour and matcha powder until a dough is formed and let the batter rest for 20 minutes away from the sun.
  3. Transfer to a piping bag with a desired tip and pipe on a non-stick baking tray without parchment paper.
  4. Bake at 150C for 18 – 22 minutes until crispy. The cookies will be nicely golden brown around the edges, do not overbake as the matcha might lose its flavour.
  5. Serve and enjoy! Do let it cool completely before storing in an airtight container, away from the sun.
