Fruit Rojak is one of those local favourites that brings together so many flavours and textures in one bite. It’s sweet, tangy, savoury, nutty and crunchy all at once. It is refreshing with the fruits, deeply savoury from the rojak sauce, and extra satisfying with crispy you tiao (dough fritters) and crushed peanut.

This version is made with a mixture of pineapple, green apple, cucumber, turnip and air-fried crispy you tiao. I also adjusted the rojak sauce with gula melaka, calamansi (lime water), tamarind water and sesame seeds for a more balanced flavour.

It is simple, fuss-free and a great way to enjoy a familiar local dish at home!

I also love how rojak reflects our local food heritage. The word “Rojak” means “Mixed” in Malay, which perfectly describes this dish of fruits, vegetables, sauce and crunchy toppings. In Singapore, rojak is also a reflection of our multicultural food heritage, with different versions bringing together Malay, Chinese and regional Southeast Asian influences in one plate!

Crispy, Easy Fruit Rojak Recipe

Crispy, Easy Fruit Rojak, a refreshing local favourite with cucumber, pineapple, turnip, green apples, rojak sauce and crushed peanuts.

Ingredients 

  • 5 – 6 Crispy You Tiao / Dough Fritters (Can be air-fried, deep fried or store bought). I prefer to crisp it up after the sauce is made
  • 180g Hei Ko / Rojak Prawn Paste
  • 40g Gula Melaka Paste / Syrup (you can also melt 40g gula melaka in 1 tbsp water)
  • 1 Tbsp Tamarind Water
  • 1 to 2 Tbsp Lime Juice
  • 2 Medium-Sized Green Apples
  • 1 Medium-Sized Pineapple
  • Turnip / Jicama, Rojak Flower, Cucumber etc if using
  • At least 100g roasted, grounded peanuts
  • Sesame seeds, to taste

Instructions

  1. First, assemble the sauce in a large bowl by mixing prawn paste, gula melaka paste, tamarind water and lime juice. Adjust the ingredients as needed e.g. more lime juice if too sweet.
  2. Cut ingredients to bite-sized pieces, cutting the fruits such as green apple last so that they won’t brown.
  3. Then, toss your ingredients including sliced you tiao / dough fritter into the batter until evenly coated.
  4. Stir in the peanuts and sesame seeds if using.
  5. Serve and enjoy! I like to serve with extra peanuts on top.
