Remember my previous recipe on a delectable Mixed Herb Focaccia? Now, you can make yours too with the convenience and efficiency of an Air Fryer! Presenting to you my optimised recipe for an aromatic Mixed Herb Focaccia with a crispy exterior and a fluffy interior.
This is so good and easy to make, I would say it’s even possible to make it for dinner after work (which I tried and did!)
The method to make this Air Fryer Mixed Herb Focaccia is rather simple and involves just mixing and hand kneading. Firstly, I mixed all my dry ingredients together before distributing my yeast evenly. Then, I added my wet ingredients in and hand kneaded it once. You will have to do two stages of proofing but in the meanwhile, consider doing laundry or prepare a bottle of wine!
I am pleasantly surprised as well that this only takes approximately 11 – 13 minutes to cook using an Air Fryer. Yes, it’s that fast! Furthermore, thanks to the heating method of the air fryer, the Mixed Herb Focaccia is always guaranteed to come out crisp on the outside.
Additionally, this recipe is easily customisable and goes well with various dips. For a start, you can add other ingredients such as garlic or cheese. Then, you can also match it with balsamic vinegar or olive oil. For myself, I dipped mine in leftover tomato soup!

Air Fryer Mixed Herb Focaccia

This aromatic and fluffy Air Fryer Mixed Herb Focaccia is guaranteed to be crisp on the outside and will definitely lit your evening up!
Ingredients
- 1 and 2/3 Cup or 220g of Bread Flour
- 1 Tbspn + 1 Tsp or 20g of Caster / White Sugar
- 1/2 + 1/4 (total 3/4) Teaspoons or 4g Instant Dry Yeast
- 1/2 Tspn or 2g Table Salt
- Approx. 1.5 Tsps – 1 Tbspn of Rosemary Leaves
- Approx 1.5 Tsps – 1 Tbspn of Oregano Leaves
- Black pepper, to taste
- 1/3 Cup or 60ml of Olive Oil + 1 Tbspn For Coating & Topping
- 1/2 Cup or 120ml of Water
Instructions
- Firstly, mix the dry ingredients (bread flour, sugar, salt, rosemary, oregano and black pepper). Then, distribute the yeast evenly and mix in.
- Next, create a well in the centre and pour in the water and olive oil.
- Knead for about 2 – 3 minutes until all ingredients come together.
- Then, rest the dough for 10 minutes.
- Subsequently, knead the dough for another 5 – 7 minutes on medium-speed until dough is sticky and can form a ball (Hand kneading is fine too!)
- Coat your baking tray (I am using 6-inch round) with olive oil and transfer your dough in. Spread the dough evenly to form an even layer.
- Cover and proof for about 35 – 40 minutes or until the dough is about 2x its original size. Nearing the last 5 minutes, preheat your air fryer to 200C.
- Next, lightly oil your fingers and create “dimples” in the bread by pressing your fingers in. Top off with more herbs if desired.
- Bake the focaccia until puffed up and golden brown or for 11 – 13 minutes at the same 200 degrees C.
- Serve and enjoy!
