Boost your crunch game with these Chocolate Cornflake Cookies! With the use of cornflakes both encrusted on the cookie, and added into the batter, these cookies are full of crunch. Furthermore, I added a good handful of chocolate chips for a gooey interior.
As per the style of my recipes, these Chocolate Cornflake Cookies are easy to make and very delicious. All you need is a single bowl, a whisk and a spatula. In fact, you can even ask a family member, such as your little one to help! The most engaging part is to roll the cookie dough in cornflakes.
Additionally, you might be curious for alternatives. And yes, you can use other type of cereals too! However, be careful as the colours of vibrant cereals can run. Nonetheless, if that’s the effect you would like, go for it!

Chocolate Cornflake Cookies Recipe

Up your cookie crunch game with these Chocolate Cornflake Cookie! Every bit of crunch is guaranteed still as good even the day after!
Ingredients
- 1/2 Cup or 120g of Unsalted Butter, Softened at Room Temp
- 1/4 Cup + 2 Tspns or 60g of White Sugar
- 1/4 Cup + 2 Tspns or 60g of Brown Sugar
- 1 Tsp or 5ml of Vanilla Extract (1.5 Tsp if essence)
- Egg, 1 large, 55g each
- 1 and 1/3 Cup or 160g of All-Purpose Flour, Sifted
- 1/2 Tsp or 3g of Baking Soda
- Approx 1 Cup or 150g of Unsweetened Chocolate Chips
- For Batter, 1 Cup or 40g of Cornflake
- For Coating, 1 Cup or 40g of Cornflake
Instructions
- Preheat your oven to 180 degrees C and line your baking tray with parchment paper.
- Firstly, cream together the unsalted butter and two sugars until light and fluffy.
- Next, whisk in the egg.
- Then, whisk in the vanilla.
- In a separate bowl, combine sifted flour, sifted baking soda, cornflakes and chocolate chips (You can add all directly to the wet batter).
- Fold in the dry ingredients into the wet.
- Then, roll balls of cookie dough and coat with cornflakes. To facilitate this, you can prepare a flat-tray plate with cornflakes.
- Transfer the cookie to the baking tray, with 3-inches of spacing in-between.
- Bake until golden browned or approx 12 – 14 minutes. Do note that this timing is based on cookies the size of 2 tablespoons of dough!
- Set aside to cool before serving!

Thanks for posting this recipe. Just made a batch of this (yielded 14 cookies), and it tastes great! Was surprised to see the inside has similar texture as muffin, got me worried for a second as I thought it was undercooked (first time baking cookie). Kinda reminds me of a muffin top :). Love it!

Honestly when I was experimenting with these cookies, there was a lot of doubt that I had. For myself, I wanted to find a good way to use up my cornflakes since I had 2 huge bags sitting around.
