Do you know you can add banana in bread? Let me show you how through my Fluffy Banana Nut Bread Loaf Recipe! Although Bananas are a common ingredient in baking, they are rarely added to breads. I always find this a pity because of how nicely sweet bananas are, and the burst of flavours they provide with each bite.
My inspiration from making this Fluffy Banana Nut Bread Loaf is from the breads I have eaten when I was younger. Most particularly, the Gardenia Banana Walnut Loaf. However, I rarely see such a flavour in the everyday bakeries. Part of the reason could be because of the difficulties in handling bananas and how bananas tend to spoil faster as an ingredient.
However, I would say that this Chunky Banana Nut Bread Loaf is worth every effort. Furthermore, if stored well (in airtight and cool conditions), this bread lasts for at least 3 – 4 days.
The best part? This recipe is not difficult to make too. Simply add the ingredients all into a bread machine. Alternatively, you can use the hand-kneaded method as well. Here, I am using my popular hokkaido milk loaf recipe for the maximum amount of fluffiness to go with these chunks of bananas and nuts. This allows a nice contrast in textures that will please even the pickiest foodie.

Fluffy Banana Nut Bread Loaf Breadmaker Recipe

This Fluffy Banana Nut Bread Loaf comes with chunks of soft banana baked into the bread and chopped nuts for a flavourful loaf!
Ingredients
For Bread:
- 2 and 3/4 Cups or 330g Bread Flour
- 1/4 Cup or 50g Granulated White Sugar (You can add up to 75g for a sweeter bun)
- 1 Large Egg, Room Temperature, 55g each
- 3/4 Teaspoon or 4g Table Salt
- 1 and 1/2 Teaspoon or 7g Instant Dry Yeast
- 1/4 Cup or 60g Unsalted Butter, Melted
- 1/2 Cup + 1 Tablespoon or 140g Milk
- Approx 2 – 3 Medium Sized Bananas, 200g, Chopped
- Approx 1/2 Cup or 45g of Nuts, Chopped
Instructions
- Place the ingredients in the sequence as specified by your Bread Maker’s instruction manual. For a reference, I added everything (except the bananas and nuts) at the bottom before adding flour and then yeast!
- Bake as per the bread maker specify. Different bread maker have different functions. For mine, I used a Soft Bread or French Bread Function.
- Then, before the bread starts rising and bake, knead and add in the chopped banans and nuts.
- Serve and enjoy once you are done! This bread browns abit on the outside.
