One of my biggest weaknesses that I hardly ever reveal is Pancakes! I always like pancakes for how soft and fluffy they are, and how they match with so many different condiments. As such, I decided to make myself these Fluffy Coffee Pancakes.
My inspiration stemmed from International Pancakes Day! However, I was really busy and didn’t have time to make any pancakes. It was only this weekend that I finally had some time to do for Brunch.
Making these Fluffy Coffee Pancakes is no rocket science so long you follow the recipe to the T! Of course, you can modify some elements such as the amount of sugar and coffee to your preference. If serving for kids or someone caffeine-sensitive, you can opt for coffee flavouring or to leave it out altogether.
For a start, you will need to ensure that you mix your dry ingredients well. This is to ensure that the baking powder is well-distributed and the pancake can leaven to give that fluffy finish we desire.
Additionally, I sifted my flour to minimise clumps within the final pancake.
Next, you will want to ensure that the wet ingredients are mixed well into the batter too. You could either mix them separately before adding it in, or what I did was to create a well at the centre (which means less clean up!).
Then, you’re all set! Just make sure to leave the batter for 10 minutes for the baking powder to react. It will be obvious from the bubbling.
Without further ado, here’s my quick recipe for these Fluffy Coffee Pancakes.
Fluffy Coffee Pancakes

If there’s one thing I always want to wake up to, it will be these Fluffy Coffee Pancakes with a drizzle of honey and strawberries!
Ingredients
- 1 and 1/3 Cup or 150g of Plain / All-Purpose Flour, Sifted
- 1 Tbspn + 2 Tsps or 30g of Granulated White Sugar
- 1 and 1/2 Tsps or 6g of Baking Powder, Sifted
- 1/4 Tsp or 1.4g Table Salt (Optional)
- One Large Egg
- 3/4 Cup + 1 Tbspn or 200ml of Coffee (I used 200ml Milk + 1.5 Tbspns Coffee Granules)
- 1 Tsp or 5ml of Vanilla Essence
- 2 Tbspns or 30ml of Melted Butter
- + Extra melted butter for greasing pan (total I melted 60ml inclusive of the 30ml for pancakes)
Instructions
- Mix together your dry ingredients (flour, sugar, baking powder, and salt).
- Then create a well in the centre and pour in egg, coffee, vanila, and melted butter.
- Whisk it together until it achieves a single consistency and set aside for 10 minutes.
- On medium heat, coat the frying pan with butter and place your pancake batter in and you can adjust the shape of the pancakes. I used 1/4 cup, you can adjust it to your preferred size.
- After it bubbles at the top, you can flip over (it shouldn’t stick to the pan) and continue cooking for 2 – 3 more minutes.
- Then, set aside to cool for approx. 5 minutes before serving with powdered sugar and honey. This is to prevent your sugar from melting!
- Serve and enjoy.
