Time for a baking hack – do you know you could use green tea bags direct? That’s exactly what I did to achieve the perfect Green Tea Shortbread Cookies, with notes of jasmine.

It will no longer surprise you after reading the above that doing so is as easy as 1, 2, 3. Simply cut open the bag, and fold in the green tea leaves into the batter.

Now onto these beautiful and fragrant Green Tea Shortbread Cookies. These crunchy cookies have a wide appeal because of their well-balanced flavour between the light bitterness of the green tea and the buttery richness of the shortbread. You can have my guarantee as well that using green tea leaves from bags can achieve that very same finish! Furthermore, they have a nice balance of sweetness too, appealing to those who prefer less sweet desserts.

Of course, these melt-in-your-motuh cookies are also instagram worthy and you can shape and customise them to your heart’s desire. I decided to have my Green Tea Shortbread Cookies in the shape of mini flowers for an aesthetic finish. You could also consider incorporating edible flower blooms such as Sakura or Lavender. A little goes a long way though, as too much can cause these cookies to be overly floral in fragrance and taste.

Finally, I would also recommend you dipping these in chocolate if you would like something more indulgent. Certainly, these also go well with coffee and tea.

Green Tea Shortbread Cookies Recipe

These elegant and floral Green Tea Shortbread Cookies have a delicious harmony between light bitterness and sweet, and will earn you praises!

Ingredients

  • 1 Cup or 230g Butter, Unsalted
  • 1 Cup or 115g of Powdered Sugar, Sifted
  • Pinch of of Salt
  • 1 Tsps or 5ml of Vanilla Essence
  • Tea leaves from 3 Green Tea Bags (You can grind them up even smaller, but I didn’t see a need to do so!)
  • 2 and 2/3 Cup or 300g of All-Purpose Flour, Sifted (+ More for rolling)
  • Approx 3/4 Cup or 150g of Dark Chocolate Chips (For coating)

Instructions

  1. Cream together the butter and powdered sugar until well-combined (about 2 minutes).
  2. Next, whisk in the vanilla, salt and green tea leaves.
  3. Fold in the sifted flour.
  4. Then, chill the dough for at least 30 minutes for the green tea flavours to be even richer.
  5. Subsequently, roll out the batter between two sheets of parchment paper; flour if you need to.
  6. Next, use your cookie cutters to make your desired shapes.
  7. Once done, bake at 180 degrees C for 10.5 mins to 13 mins or until browned around the edges. You might have to adjust the baking time accordingly depending on how big your cutters are.
  8. Then, let cool for 10 minutes before serving!

  • Total time: 2 hours 30 mins
  • Yield: 60 Mini Cookies (dependent on size of cookie cutters!)

Notes:
