For every baking recipe I’ve, most will tend to express their surprise at how much butter and sugar goes to create a tasty cake. As such, a common query is if it’s possible to cut back on sugar and butter. With this in mind, I developed this Healthier Banana Cake recipe that is equally fluffy and tasty, while make each slice more nutritious as a whole!

Most particularly, this uses one-third the amount of the usual added sugar and fats. Furthermore, there is a much higher percentage of fruits here including the bananas, and blueberries if you’re using!

Before you proceed further, let’s address the most importnat question we all have – how does this Healthier Fluffy Banana Cake taste as compared to the usual? The usual being my famous Banana Butter Cake for a start.

For a start, I would say it has a more natural form of sweetness from the fruits (bananas, and blueberries). Additionally, because of the higher fruit content (particularly bananas), the cake is overall more moist (while still remaining fluffy). Certainly, it tastes less indulgent or rich, but this Healthier Fluffy Banana Cake is definitely a more sustainable option. This is especially so for people watching their waist lines including myself!

The most amazing thing is that only 55g added sugar and 65g added butter (fats), of which both ingredients are just one third of what we see in a usual cake.

I would definitely say this recipe is woth giving a go – and I absolutely like having these for breakfasts or tea break. Most importantly, I want my cake tasty and still eat it too (by making it healthier!).

Finally, if you would like it to be more indulgent, consider adding a lemon glaze and toasted nuts. In theme with this recipe, this is also a lower sugar lemon glaze.

Without further ado, the recipe!

Healthier Fluffy Banana Cake

This Healthier Fluffy Banana Cake will prove that you can have your cake tasty and still eat it too with way less added sugar and fats!

Ingredients

Banana Cake

  • 3 Large Ripe Bananas (Total approx 200g – 250g excl. peel)
  • 2 Eggs
  • 1 Tsp or 5ml of Vanilla Essence
  • Pinch of cinnamon (optional)
  • 1/4 Cup or 65g of Melted and Cooled Butter
  • 1/4 Cup + 1 Tsp or 55g of White Sugar
  • Approx 3/4 Cup or 150g of Blueberries (Frozen works well too, and can be substituted with other berries / dark chocolate)
  • 1 and 3/4 Cup or 200g of Plain Flour
  • 1 Tsp or 4g of Baking Powder

Lower Sugar Lemon Glaze

  • 1 Cup or 90g of Powdered / Icing Sugar
  • 2 Tbsp or 30ml of Lemon Juice (1 lemon)

Instructions

  1. Pre-heat your oven to 180C and coat your 8in x 4.5 in loaf pan with softened butter or parchment paper.
  2. Then, mash 3 bananas using a fork until paste-like.
  3. Next, whisk in 2 eggs, pinch of cinnamon and the vanilla.
  4. Subsequently, whisk in the melted and cooled butter and white sugar.
  5. Add the plain flour and baking powder to the top of the batter but do not mix in yet. Place in blueberries (or other filler ingredients) on top of the flour and coat nicely, before folding everything altogether until even.
  6. Transfer the batter to the baking tray and tap to remove excess air.
  7. Bake for 42 – 45 minutes until nicely golden brown. Let it cool for at least 20 mins before slicing. In the meanwhile, you can consider making the lemon glaze by simply mixing the two ingredients together until even.
  8. Serve and enjoy!
