My favourite aspect of this Honey Nut Cake is definitely its nutty and lightly sweet flavours. Not only is there honey in the cake, there’s also a shiny honey glaze to give that floral finish. Additionally, this is nicely complemented with a touch of nuts.

If you’re in the mood to indulge, consider adding a dollop of whipped cream or jam like I did! Honestly, this Honey Nut Cake is a really pleasant bake that’s perfect for any time of the day.

If you’re strapped on time, this Honey Nut Cake might just be the answer for your next bake! Not only is this a one-bowl recipe, the ingredients require basic mixing to come together. As a matter of fact, I baked this within an hour. However, you might take longer should you be serving it with additional toppings.

Furthermore, this cake is easily customizable. For instance, choose the variety of nuts or fillings you would like and the honey cake serves as a nice flavour background. Caution is needed though, if you’re adding oats which can potentially dry out the cake.

An important note to pay attention to would be the choice and amount of honey. Since the Honey Nut Cake get its honey flavour mainly from the glaze, it’s better to pick a honey choice that you like. Furthermore, the choice of honey can influence the cake profile. An example from my bake will be the use of natural honey for a mildly fragrant finish. Once you decided on the choice of honey, be careful on how much you’re applying too.

Honey Nut Cake Recipe

This bakery styled Honey Nut Cake is fragrant and lightly sweet. Pair it with coffee or tea for a perfect afternoon treat!

Ingredients

  • 1 and 1/3 Cup or 160g of All-Purpose Flour
  • 1/2 Cup or 115g of Unsalted Butter, Softened at Room Temperature
  • 1/3 Cup or 65g of White / Brown Sugar (You can reduce and use 40g but the cake might be drier)
  • 1 and 1/2 Tsps or 6g of Baking Powder
  • 2 Large Eggs (55g ea.)
  • 3 Tbspns or 45g of Honey
  • 1 Tsp or 5ml Vanilla Extract
  • 1/4 Tsp or 1.4g of Table Salt
  • 2/3 Cup or 100g approx of Nuts (I used pecans)

Instructions

  1. Line a 8 inch round with parchment paper and preheat the oven to 180 degrees C or 350F.
  2. Firstly, cream together the butter and sugar until light and fluffy.
  3. Then, whisk in the eggs, salt, and vanilla. Subsequently, whisk in the honey.
  4. Next, combine flour and baking powder in a separate bowl. 
  5. Sift the dry ingredients, and then fold it into the wet mixture. Alternatively, whisk or mix it at low speed for just a couple of minutes to combine.
  6. Bake for 35 to 40 minutes or until golden brown and shrunken from the sides. Make sure to keep a close watch after the 30 minutes mark!
  7. Finally, let it rest for 30 minutes before glazing it with honey.
  8. Serve and enjoy. If you find the honey too mild, double glaze the cake!
