This Ice Cream Core Lava Cake takes the classic molten lava chocolate cake to the next level, imagine breaking into a warm, fudgy cake only to find a scoop of ice cream melting beautifully inside. It’s nicely indulgent, dramatic, and surprisingly easy to make at home.

What exactly is a Ice Cream Core Lava Cake?
The outer layer is a soft, molten chocolate cake while the inside hides a ball of ice cream that melts as you bake it, creating a dreamy mix of textures and temperatures. It’s not just dessert, it’s an experience!
Before getting started with your favourite chocolate lava cake recipe, here’s the one I am using for guaranteed decadence and lava experience: Molten Chocolate Lava Cake
Here are some useful tips for success on this Ice Cream Core Lava Cake:
- Keep the ice cream super frozen before baking. It’s the secret to maintaining the molten core. Simply leave your ice cream in the freezer for at least 24 hours in order to do so.
- Don’t overbake, every extra minute in the oven harders the centre, and may make the ice cream too melty
- Unmould carefully, as the liquid ice cream core centre might spill out if you accidentally create a hole within the exterior of the cake. If you don’t feel confident, try out starting with 1 lava cake first
- You can try various fun variations, such as matcha or cream cheese ice cream. I am using Ben & Jerry’s all new Brookieees & Cream here because it’s so generous with the brownie chunks and cookie swirls!

Ice Cream Core Lava Cake Recipe

This Ice Cream Core Lava Cake comes with a dreamy mix of textures and temperatures. It’s not just a dessert, it’s an experience!
Ingredients
- Up to 2/3 Cup or 150g of Frozen Ice Cream (I am using Ben & Jerry’s Brookieees & Cream)
- 1/3 Cup or 80g of Unsalted Butter
- Approx 3/4 Cup or 135g of Dark Chocolate Chips
- 3 Large Eggs, approx 60g weigh inclusive of shell OR 60g yogurt (vegetarian version)
- 1/4 Cup + 2 Tsp or 35g Icing Sugar, Sifted
- 1/4 Cup or 30g of Plain Flour, Sifted
- 1/2 Tsp or 2.5ml of Vanilla Essence
Instructions
- First, melt together butter and chocolate (Bain marie method, medium low heat or microwave).
- While warm, whisk in sugar and vanilla.
- Then, whisk in the 3 eggs and the flour.
- Place a small scoop of batter into the ramekins, place frozen ice cream into the core and cover with more batter.
- Bake 8 mins 30s – 10 mins, 200C, until top is no longer watery (to adjust accordingly).
- Assemble with mini brookies and cream, or other toppings as desired.
- Serve and enjoy!
