Nothing tops the tropical goodness of a refreshing and thirstquenching dragonfruit, especially a No-Bake Dragonfruit Cheesecake! Each slice comes with a bright pop of natural purple from the dragonfruit itself, with additional pureed dragonfruit as glaze. The best part? It’s super easy to make this impressive looking dessert.

As I’ve mentioned in my No-Bake Mango Chessecake Recipe, the biggest problem that no-bake cheesecakes like these face is how fast they melt at room temperature. This is especoally so in warmer climates such as the tropics (including Singapore and Malaysia). As such, it is important to consider the use of stabilising ingredients, especially so given the high water content of dragonfruits.

On the top of my list is whipping cream. Creaming whipping cream with cream cheese not only lightens the no-bake dragonfruit cheesecake, it helps to stabilise it as well. This combination does very well with a dash of dissolved gelatine powder. For reasons you can’t consume gelatine, I will recommend flavourless agar agar as the best substitute. Just a little goes a long way in stabilising the cheesecake.

Nonetheless, it is okay to skip the gelatine altogether. Just make sure not to leave your cheesecake out for too long!

Now, onto the flavours and textures that this No-Bake Dragonfruit Cheesecake will offer you.

Firstly, this cheesecake will have the background of the usual cheesecake, with some natural sweetness from the dragonfruit. If you would like a stronger dragonfruit flavour and bolder colours, I would suggest you to use up to 40g more dragonfruits (though do bare in mind it will be softer, especially so if left for too long at room temperature).

Next, and as the image suggests, this cheesecake comes with an amazing mix of texture. The cheesecake layer is nicely creamy with the crunchy digestive biscuits layer. There are definitely ways you can switch this up, such as using chocolate biscuits instead!

Finally, the unmissable pop of natural purple. It’s all natural, and it’s sure to last!

Without further ado, the recipe.

No-Bake Dragonfruit Cheesecake Recipe

This refreshing No Bake Dragonfruit Cheesecake makes use of a tropical favourite with natural purple hues. Creamy, fruity and delish!

Ingredients

For Crust:

  • 1/2 Tablespoon or 120g of Butter, Melted
  • 175g of Crushed Biscuits, such as Digestives or Marie Biscuits

For No-Bake Cheesecake Layer:

  • 1/2 Cup or 120g of Heavy Whipping Cream
  • 1/2 Cup or 110g of Dragonfruit Purée (Can use up to 140g) + Extra for Topping, Optional
  • 1 and 1/4 Cups or 300g of Cream Cheese
  • 3 Tbspns or 35g of Icing Sugar (Sifted)
  • 2 Tbspns or 30ml of Warm Water
  • 1 and 1/4 Tsp or 3.8g Gelatine Powder

Instructions

  1. Firstly, smash the biscuits in a ziploc bag until the crumbs are small and fine.
  2. Melt the butter and then mix in the biscuit crumbs until it is well-mixed and clumpy (sticks together).
  3. Then, transfer to the bottom of the springform pan (I used 6 inches, lined with parchment paper) and form an even layer. Refrigerate for 30 minutes while you prepare the cream cheese filling.
  4. For the Cream Cheese Filling, mix together the Whipping Cream and Cream Cheese using a hand mixer.
  5. Subsequently, mix in the sifted powdered sugar and mix until smooth or of a single consistency.
  6. Then, dissolve the gelatine powder in warm water and whisk. I set aside the dissolved gelatine mixture for 5 minutes so that it won’t cause the cheesecake mixture to curdle.
  7. After the dissolved gelatine mixture is cooled, mix the gelatine mixture and dragonfruit puree into the cheesecake batter using a hand mixer.
  8. Transfer on top of the biscuit layer and set in the fridge for 6-8 hours or overnight.
  9. Decorate, serve and enjoy!
