This Roasted Berry Pancakes recipe came in the most unplanned day, after a long workday when inspiration struck a little too strongly to wait for the weekends to film. So yes, the lighting in my photos and reel might look a little different from the usual bright kitchen set up, but trust me, the recipe was simply too good not to share immediately.

These Roasted Berry Pancakes are my favourite kind of kitchen magic with minimal effort and maximum flavour. I absolutely like the gorgeous natural purple hue from the roasted berries (likely the blueberries!). They’re perfect for breakfast, perfect for dessert, and honestly, perfect for those days when you decide that breakfast for dinner is the best kind of adulthood freedom.

Why do we roast the berries first? For this recipe, the berries do most of the heavy lifting. A quick roast in the oven helps:

  • Concentrate their natural sweetness
  • Enhance their aroma
  • Reduce and release excess moisture so that your pancakes don’t turn out unexpectedly soggy
  • Creates that beautiful purple colour in the batter (sometimes ruby)

You can use any mix of berries you like be it blueberries, raspberries, strawberries, blackberries or whatever you have on hand! You can also feel free to experiment with other fruits including lemons and apples.

Roasted Berry Pancakes Recipe

These Roasted Berry Pancakes reminded me of one of the best parts of adulthood is choosing breakfast for dinner and it is a day well lived!

Ingredients 

  • 3/4 Cup of Assorted Berries (Any raito, and any from blueberries, raspberries, strawberries and blackberries)
  • 1 Tsp or 4g of White Sugar
  • 1 Cup or 120g All-Purpose / Plain Flour
  • Pinch of salt
  • 1 and 1/2 Tbsp or 20g of White Sugar
  • 1 Tsp or 4g of Baking Powder
  • One Large Egg, approx 60g
  • 1/2 Cup or 120ml Milk
  • 1/4 Cup or 60g Yogurt
  • 1 Tsp or 5ml Vanilla Essence
  • 1/4 Cup or 60g Melted Butter + Extra for coating

Instructions

  1. Combine the assorted berries with white sugar and toast in the oven at 180C for 10 minutes. Then, set aside to cool till lukewarm.
  2. In a separate mixing bowl, combine the dry ingredients (plain flour, salt, white sugar, baking powder).
  3. Then, add in all the wet ingredients and roasted berries.
  4. At medium high heat, melt butter and spread 1/2 cup of batter. Once it bubbles, flip over and continue cooking until nicely purple brown.
  5. Assemble with more berries, butter, granola and maple syrup!
  6. Serve and enjoy!
