I’ve always wanted to work with pastry, and I finally did with these Valentines Strawberry and Cream Pastry Hearts! Each pastry heart comes with two crispy layers, sandwiching a a luscious layer of whipped cream and strawberries. I also included a small dollop of fruit preserves as a surprise!

As many of you would already be able to guess the best part, is that this recipe is easy to do!

If you’re foreign to working with puff pastry, let me get you up to speed! Puff pastry is a light, flaky pastry made from wheat dough and water, and sometimes, butter or other types of fats are incorporated into it. Due to the tedious process of making these from scratch, you can always purchase them direct from the store, and they are likely to taste just as good!

To work with these store bought puff pastry sheets, all you have to do is to roll them till a desired thickness. Thereafter, you can work with it. For these Valentines Strawberry and Cream Pastry Hearts, you would want to cut out little heart shapes (approx 3.5 – 4 inches). Then, you’re all good to go and to bake them! Of course, if you would like your pastries to have more layers, you can fold and roll them together no problem.

The amazing part about these puff pastries is that it’s so easy to impress your love ones with these! Furthermore, it is a very manageable recipe when you’re making in small batches, including the whipped cream. Finally, there’s also so much customisabilty to it – be it the use of strawberries, raspberries or even chocolate!

I hope you will like these as much as I do, and hope the video is of help. If not, feel free to ask me any questions!

Without further ado, the recipe.

Valentines Strawberry and Cream Pastry Hearts Recipe
by Javier Tan February-02-2025

Bake to impress with these elegant and delicious Valentines Strawberry and Cream Pastry Hearts. You would be sure to secure that heart!

Ingredients

  • Half a package of Puff Pastry Sheets (mine was approx 200g, and in a block)
  • Egg, for egg wash
  • 3/4 Cup or 180ml of Whipping Cream
  • At least 6 Strawberries, Sliced
  • Jam (optional)
  • Icing Sugar (to dust)

Instructions

  1. Firstly, roll out the puff pastry till about 4mm in thickness. Then, fold into two and continue rolling till about 5mm – 6mm in thickness.
  2. Using a heart shaped cookie cutter, cut out as many hearts as you can! My cutter is approx 3.5 – 4 inches.
  3. Then, refrigerate your pastry hearts for 10 minutes before applying the egg wash. Poke a few holes using a fork to ensure that the heart shape is maintained after the baking process.
  4. Bake 200C in a pre-heated oven for 9 – 12 minutes or until nicely golden brown. Set aside to cool for 5 mins before slicing into halves.
  5. In the meanwhile, whip up the cream and slice up the strawberries.
  6. Next, assemble by piping the cream into the pastry heart base, and lining up with strawberries. I left the core empty for a dollop of jam!
  7. Dust with icing sugar. Serve and enjoy!
