A marriage of cultures and flavours, these Cheesy Pineapple Tarts will be sure to impress fans of the sweet and savoury. While Pineapple Tarts are a true blue Southeast Asian concept, I have decided to incorporate French cheese into these for a savoury, lightly nutty note. The end result was truly amazing and tasty, and I will strongly recommend you to try this if you’re a cheese lover… Or not if you’re watching your calories because these are truly addictive!
My inspiration for these come from my snacking of the classic pineapple tarts after eating my cheesy pizza. With the aftertaste of cheese still in mouth, I was pleasantly surprised by how well it complements that of the sweet and tart pineapple tart. Thereafter, I started experimenting adding freshly grated cheese into both the batter and as a topping, and I was blown away.
These Cheesy Pineapple Tarts are well-received especially for the savoury element that balances out the typical sweetness. Furthermore, you can always add more cheese. Additionally, customise it with the type of cheese you like for different notes.
There are many types of cheese you can use here. For instance, you can consider options such as mozzarella and cheddar, some of which are in the powdered form. For myself, I chose to use freshly grated French cheese for its quality, and because it combines well with the butter I am using. There’s no right answer or cheese here, but make sure to research and choose one that you like!
Thereafter, the steps to assemble these Cheesy Pineapple Tarts are rather straightforward and would not be foreign if you’ve caught my earlier videos. The key difference here is the incorporation of cheese in the batter and as a topping. Surely, I’ve also removed the milk powder component or the dairy part of these tarts can get overwhelming.

by Javier Tan January-28-2024
These Cheesy Pineapple Tarts are a marriage of cultures and flavours. Sweet and savoury, these are guaranteed to be addictive!
Ingredients
For Tarts:
- 1 Cup or 225g of Unsalted Butter, Softened at Room Temperature
- 1/3 Cup or 60g of Granulated White Sugar
- 1 Large Egg, weighing approx 60g
- 2 and 3/4 Cup or 320g of All-Purpose / Plain Flour
- 2 Tablespoon or 20g of Cornstarch / Cornflour
- Approx 1/3 Cup or 60g of Cheese, Grated (Up to 90g, I use 10g extra for topping)
- 1/4 Tsp or 1.4g of Table Salt
- Approx 400g – 500g of Pineapple Paste Filling
For Egg Wash:
- 1 Egg Yolk
Instructions
- Cream together softened butter and sugar until it is light and fluffy, about 2 minutes.
- Then, add in salt and egg and mix well.
- Next, fold in the dry ingredients (flour and cornstarch) and grated cheese.
- Preheat the oven to 180 degrees C (or 350F) and roll the pineapple paste into 8-10g balls for filling (You can even roll the pineapple paste before starting on this recipe).
- Then, stretch 10g of dough until its thin and wrap around the pineapple paste ball. Roll it well into a ball or shape it according to your liking.
- Next, apply the egg wash using a pastry brush or clean fingers. Be sure not to only apply to the top and do not let it drip or the base will be sticky after baking.
- I baked mine for 8 minutes, removed from oven and top with more cheese before baking further for another 10 mins till nicely golden brown.
- Serve and enjoy!
