An uncommon, and a favourite flavour combination of mine, is the Earl Grey and Banana combination! When you compare their notes, Earl Grey has a citrusy tang to it and its slightly floral, complementing the creamy and mellow banans well. As such, I thought to capture this flavour combination in a delicious and fluffy Earl Grey Banana Loaf.
Needless to say, I got to serve this with natural honey and strawberry jam for the full tea time experience. Naturally, that also means a good cup of coffee or tea!
The perfect Banana Loaf should have a good balance of flavours, moisture and sweetness. An additional criteria I have is also fluffiness!
While that might sound daunting to achieve, it’s actually quite doable! The best ingredient you need to have on hand is ripened, sweet bananas. Thereafter, consider adding aromatic ingredients such as cinnamon and vanilla to elevate its flavour profile. Now, you could probably see why I infused Earl Grey to make an Earl Grey Banana Loaf!
Then, make sure to use sufficient milk, or even yogurt, to ensure a nicely moist loaf!
The infusion of Earl Grey into the loaf is via milk, in which I steeped three bags of Earl Grey tea in the milk. Always keep a close look out to ensure that the milk doesn’t get burnt!
A final ingredient that I would strongly recommend is honey. In fact for this Earl Grey Banana Loaf, I coated each slice with a thin layer of honey. Doing so not only provides an extra depth of natural sweetness, the coating also helps to seal the moisture within each slice.
If you would like to change this up, you can also consider adding dark chocolate chips or walnuts – both of which complement this Earl Grey Banana Loaf so very well! However, always be cautious in incorporaitng new flavours especially given how fragile tea flavours could be like.
Otherwise, this is a really easy and straightforward recipe, and I am sure you will be able to nail it!
Without further ado, the recipe.
