It’s been a while since I last shared a baking hack or tip, and I thought it’s about time. This time, it hits somewhere close to home especially in the humidity and heat of Southeast Asia where fruits wilt fast. However, I noticed that some stores have consistently served desserts incorporating fruits with their prime colours and flavours. This got me to a journey years back then in finding out how to go about it, and I am here to share!
The secret? You just need two ingredients – fruit jam or fruit preserves, with water. And voila, you would be able to glaze fruits on any desserts and make them shiny naturally.

For ease of reference, I decided to use my recent Strawberry and Cream Tart that I’ve made to show you! From this picture, you can see how brightly lit the strawberries are with a shiny glimmer. Without which, the strawberries would’ve look much less appetizing and they would’ve lost their colours much faster too – be it through natural heat, or the cold blasts in a refrigerator.
The effect of the natural fruit glaze really helps to provide a layer of shine, while providing a protective layer of moisture against the elements, allowing the fruits to last much longer in their prime flavours and colours.
On to the secret and how easily it is do to this – all you would need is fruit preserves, water and a saucepan. Bring everything to medium-low heat before applying the glaze. I’ve also included my exact recipe proportions below for your consideration and for rough estimations! Of course, you can also consider the use of a microwave which I suspect should work just as well with some stirring.
Finally, this recipe is so flexible and easy, here are some additional pointers that will surely help convince you that it’s all worth it:
- Any type of fruit jam or preserves work
Be it apricot, blueberry, orange or even strawberry, every type of jam or preserves work! A point to note however, would be the use of a strainer if your choice of jam / preserve is higher in fibre or has seeds. While this step would be optional, it does help make everything easier especially when you dip your brush and apply to your fruits. - The amount of water is quite foolproof
I’ve included a rough guide on the amount of water I’ve used, but it’s rather foolproof especially if you add water in the excess. If the glaze is too watery (instead of paste-like), simply continue simmering until it reaches the desired consistency. - It lasts!
Expect the fruit glaze to work all the way until you’ve consumed the dessert altogether. It just lasts really well.

How to Glaze Fruits (Make Them Shiny) Naturally

Ever wondered how to preserve the colours and flavours of fruits in desserts? Try this easy all natural way you won’t want to miss!
Ingredients (Multiply accordingly)
- Approx 1/4 of Fruit Jam / Preserves (any flavour work)
- 1 Tbsp or 15ml of Water
Instructions
- Firstly, place fruit jam and water into a saucepan.
- Heat at medium low heat until fruit jam loosen and mixture is of a single consistency.
- Then, strain the mixture if needed (especially if the jam / preserve contains a lot of seeds).
- Use a pastry brush to glaze a thin layer of the fruit jam / preserve syrup over your fruits.
- Serve and enjoy!
