Make these fragrant and crunchy Nestum Peanut Cookies this Chinese New Year! Made with Nestum, these Nestum Peanut Cookies come with an extra crunch.

Quick introduction for those who do not know what’s Nestum, it’s a cereal under the Nestle brand. It has been made and added into various baking recipes such as pineapple tarts for an extra crunch.

My inspiration to incorporate Nestum into these Peanut Cookies is to provide a crunchy element to these cookies. As some of you may be familiar, the traditional peanut cookies has a melt-in-your-mouth texture. However, I wanted to mix it up a little and I am glad that my experiment is successful! Not only are these Nestum Peanut Cookies nicely crunchy, they also retain the same aroma and flavours of the original peanut cookies!

Additionally, these cookies are so easy to make within 5 simple steps and you will just need one bowl. No complicated techniques or machines are needed, apart from an oven.

Nestum Peanut Cookies Recipe

Aromatic, crunchy, and nutty, these Nestum Peanut Cookies are a step up from the traditional peanut cookies!

Ingredients

  • 1 Cup or 120g of All-Purpose / Plain / Cake Flour, sifted
  • 1 and 1/3 Cup or 150g of Grounded Roasted Peanut
  • 1/2 Cup or 60g of Powdered Sugar, Sifted
  • 2/3 Cup or 70g of Nestle’s Nestum Cereal
  • 2/3 Cup or 160ml of Peanut Oil (+20g more if batter does not come together)
  • 1 Egg yolk, whisked, for Egg Wash
  • Roasted Peanuts, for topping

Instructions

  1. Pre-heat your oven to 180 degrees C and line baking tray with parchment paper.
  2. In a large mixing bowl, mix Nestum cereal, grounded roast peanut, plain flour, and icing sugar.
  3. Then, pour in the peanut oil and knead using a spoon or hands to form an even dough.
  4. Next, shape the cookies (approx. 1 tbspn of batter each), and glaze with egg wash. Top off with peanut if desired.
  5. Bake for 12 – 15 minutes or until golden brown.
  6. Serve and enjoy!
