Been due time since I shared a cheesecake recipe and what could be better than a No-Bake Baileys Cheesecake? The infusion of liquor and silkiness of the cream cheese layer is one texture to behold!

While I am not a huge fan of alcohol, the infusion of Baileys always get me going! Therefore, I knew it will definitely be possible to whip out a liquor-infused dessert. My answer: No-Bake Baileys Chessecake.

My choice of liquor chosen is the limited edition Strawberry & Cream Baileys for that romanic, valentine touch. However, do feel free to use the liquor of your choice!

This No-Bake Baileys Cheesecake is extremely easy dessert to assemble and takes minimal effort. While a stage calls for the whipping of cream, you could omit the step and just mix everything in a single bowl to-go! Furthermore, you can feel free to add in your own food colouring.

However, do note that the No-Bake Baileys Cheesecake is unlikely to last long at room temperature. As such, do not transport it too far or leave it out too long without any ice packs. Otherwise, they will last as long as you can resist them!

For my choice of decoration, I have chosen to use dollops of chocolate and strawberries but feel free to customize it as and however you would like your No-Bake Baileys Chessecake to be!

No-Bake Baileys Cheesecake Recipe

With a whiff of liquor, this No-Bake Baileys Cheesecake is a fun and adulty touch to the everyday Cheesecake!

Ingredients

For Crust:

  • 1/3 Cup + 1 Tablespoon or 100g of Unsalted Butter
  • 7 to 8 Pieces or 175g of Digestive Biscuits

For No-Bake Cheesecake Layer:

  • 1/2 Cup or 120g of Heavy Whipping Cream
  • 1 and 1/2 Cup or 370g of Cream Cheese
  • 1/4 Cup or 50g of Icing Sugar
  • 1/4 Cup to 1/3 Cup, or 60ml to 80ml of Baileys (I used Strawberry and Cream)
  • Food colouring (optional, I used pink for this)

Instructions

  1. Firstly, smashed the digestive biscuits in a ziploc bag until it is of fine crumbs.
  2. Next, melt the butter and then mix in the digestive biscuits until it is well-mixed and clumpy.
  3. Then, transfer to the bottom of the springform pan (I used 7 inches, lined with parchment paper) and form a nice layer.
  4. Next, transfer the biscuit layer into the fridge while you prepare the cream cheese filling.
  5. For the Cream Cheese Filling, mix together the Heavy Whipping Cream, Cream Cheese and Icing Sugar using a hand mixer until smooth or of a single consistency. Alternatively, whip the cream with powdered sugar before folding in.
  6. Mix in the Baileys and food colouring until it is smooth.
  7. Transfer into the biscuit layer and set in the fridge for 6-8 hours or overnight.
  8. Decorate, serve and enjoy!
