Classic tiramisu will always have a special place in my heart, but sometimes I find myself craving something a little lighter and fruitier! That’s where this fruity Berry Tiramisu comes in, a refreshing twist on the Italian classic, layered with juicy berries puree, soft sponge fingers and a smooth vanilla mascarpone cream.
I actually taught this recipe during one of my recent classes, and it quickly became a crowd favourite. What I love most about it is how the natural sweetness and slight tartness of the berries balance beautifully with the rich mascarpone cream. It feels indulgent, yet bright and refreshing all at the same time!


What Makes this Fruity Berry Tiramisu Special
Instead of the traditional coffee soak, the sponge fingers are dipped into a berry soaking syrup made simply with berries, sugar and water. As the mixture simmer, the berries slowly release their juices, creating a naturally vibrant syrup that carries the flavour through every layer of the dessert!
I like to let my berries and sugar sit together for a short while for a first level of extraction, but you can simmer directly if you’re short on time. Either way, the result is a beautifully syrup that gives this tiramisu its signature fruity flavour!
The cream layer is a silky mascarpone mixture, lightly flavoured with vanilla. The vanilla complements the berries without overpowering them, creating a balanced and elegant flavour profile.
Assembling the Tiramisu and Puree
The assembly follows the familiar tiramisu layering method:
- Quickly soak each sponge finger in the berry syrup (no more than 1 second on each side so they don’t become soggy)
- Lay them into the base of your dish
- Spread over a generous layer of mascarpone cream
- Add a layer of berry puree, made from softened berries and leftover soaking syrup. Make sure to reserve some for the second or subsequent layers of sponge fingers!
If you do not have a blender, you can layer the soft fruits directly on top of the cream too! Alternatively, topping off with store bought berry puree works just as well, making sure to taste for its sweetness to place in the right portion.
Finally, the tiramisu is finished with a smooth layer of cream before being chilled in the fridge. This resting time allows all the flavours to come together and the dessert to set beautifully.
Once you’re ready to serve, garnish with fresh berries and mint leaves. If you enjoy tiramisu but want something a litter bright and more refreshing, this Fruity Berry Tiramisu might just become your new favourite.

Fruity Berry Tiramisu Recipe

This Fruity Berry Tiramisu is perfect if you like something a little brighter, more refershing with a lovely pop of natural colours!
Ingredients
- 120g Mixed Berries, washed
- 1/4 Cup or 50g of Sugar (to adjust + more if needed to sweeteen puree)
- 1/3 Cup + 1 Tbsp or 100ml of Water
- 3/4 Cup or 160g of Mascarpone
- 1 and 1/3 Cup or 320g of Heavy Whipping Cream
- Approx 1/2 Tsp Vanilla Extract
- Additional berries and mint as garnish
- 16 Tiramisu Fingers
Instructions
- Firstly, mix together the berries and sugar and let them sit together for 5 – 10 minutes to extract some berry juice. Skip this step if you’re short of time.
- At medium low heat, simmer together the water, berries and sugar for 8 – 10 minutes to prepare the soaking syrup. The fruits should look slightly shrivelled up and you can mash the fruits along the way. Leave to cool.
- While waiting, whip together the mascarpone, cream and vanilla at low speed for 3 – 4 minutes until you form stiff peaks.
- Then, soak each tiramisu sponge finger for at most 1 second on each side and use it to form the first layer.
- Use the cream as the second layer, and berry puree as the third layer. Note: For the berry puree, I blend the remaining berries and soaking syrup after setting aside some to soak the second layer, and thickened at low heat for 3 – 4 minutes before leaving to cool.You can also use commercially bought berry puree, or to use the softened fruits directly as the layer.
- Top off with another layer of fingers and cream.
- Set in the fridge to set for at least 6 hours or overnight.
- Garnish with additional berries and mint leaves once ready to serve.
