Pineapple tarts are one of those treats that come with memory, tradition and a lot of emotion. They’re not meant to be “clean” and they’re definitely not meant to feel like a compromise. But over the years, I’ve found myself wanting a version that feels just a little lighter, one I can enjoy mindfully, share generously and still feel good about.

This healthier pineapple tart isn’t about restriction or cutting things out entirely. It’s about small, intentional adjustments that add up to a more balanced bake, while keeping the taste and texture true to what a pineapple tart should be.

Less, not none

Instead of eliminating sugar completely, this version uses less. The dough is gently sweetened, enough to support the tang of the pineapple filling without overpowering it. The result is a tart that doesn’t feel cloyingly sweet, and one where the pineapple gets to shine.

Healthier baking, to me, isn’t about swapping ingredients just to tick a box. It’s about understanding which elements matter most for flavour, and where you cna ease off anyone noticing, except maybe our body after the third tart!

Better balance in fats

Butter gives pineapple tarts their signature tenderness and aroma, so it stays. But part of the fat is replaced with a neutral plant oil, which helps reduce the overall saturated fat while keeping the crumb soft and melt in the mouth. You still get richness, just in a gentler, more balanced way.

A little more fiber, quietly

A portion of the refined flour is replaced with wholegrain flour. Not enough to change the texture or make the tart heavy, but just enough to add dietary fiber and depth. It’s the kind of change that you don’t taste directly, but it contributes to a bake that feels more satisfying overall.

Almond flour instead of milk powder

In this version, almond flour takes the palce of milk powder. It adds a subtle nuttiness and tenderness to the dough, while contributing more nutritional value. It’s a quiet upgrade, one that works in the background without altering the classic character of the tart.

Portion awareness, not deprivation

The pineapple filling is slightly reduced per tart. Not to skimp, but to bring the ratio of crust to filling into better balance. When the dough and filling complement each other, you don’t actually need as much sweetness to feel satisfied.

Overall, this healthier pineapple tart is still very much a festive treat. It’s not pretending to be something else, and it doesn’t ask you to earn it or justify it. It’s a more intentional version, one that fits better into everyday life while honouring tradition.

Healthier Pineapple Tarts Recipe

This Healthier Pineapple Tart recipe honours traditional, satisfying flavours and nostalgia with intentional healthier substitutions!

Ingredients

  • 2/3 Cup or 150g of Butter, softened at room temperature
  • 1/4 Cup or 60ml of Neutral Vegetable Oil (e.g. Canola)
  • 3 to 4 Tbsp or 35g to 40g of Granulated White Sugar
  • 1 Large Egg
  • Pinch of Salt
  • 1 and 3/4 Cup or 230g All-Purpose / Plain Flour
  • 1/2 Cup + 1 Tbsp or 70g of Superfine Wholegrain Flour
  • 2 Tbsp or 15g Cornstarch
  • 1/4 Cup or 20g Fine Almond Flour
  • An additional egg for egg wash
  • 400g Pineapple paste

Instructions

  1. Firstly, cream together softened butter, oil and sugar until combined, approx 3 minutes.
  2. Then, whisk in the egg and salt.
  3. Next, fold in the flour, wholegrain flour and almond flour until a dough is formed. Rest the dough for 15 minutes.
  4. Roll out the dough between two sheets of parchment paper, lightly flouring it, to your desired thickness. Then, cut out using cookie cutters, similarly, lightly flouring it if required.
  5. Apply egg wash around the corner (not the centre) and bake the first round for 170C,  8 minutes.
  6. Then, place the pineapple jam ball on top (each rolled into 7g – 8g balls) and bake for 170C, 13 – 15 mins. Adjust according to how golden brown you like them.
  7. Once fully cooled, store in an airtight container.
