Nothing I want to wake up to more than a cup of coffee and a scrumptious plate of these Mini Banana Stuffed Pancakes! Each of these fluffy mini pancake comes with a hot, almost melty core of sweet banana. They’re absolutely heavenly with a drizzle of honey and the tart sweetness of berries.

The making of these Mini Banana Stuffed Pancakes lies in a simple technique of coating each banana slice with pancake batter. Once generously coated on both sides, you can proceed to cook them just like any other pancake!

On the pan, there is something magical that happens here! The heat from the stove will provide a nice caramel finish to the banana encased within, while crisping up the edges of the mini pancakes. The end result is absolutely delicious and and I am drooling as I am writing!

Needless to say, this technique applies for any pancake recipes (or at least most), including your go to. However, I thought to still include my recipe here that has been delivering foolproof, fluffy pancakes for years!

Mini Banana Stuffed Pancakes

Say good morning to this delicious platter of fluffy mini pancakes, each encasing an almost melty, flavourful caramelised centre of bananas!

Ingredients

  • 1 and 1/3 Cup or 150g of Plain / All-Purpose Flour, Sifted
  • 1 Tbspn + 2 Tsps or 30g of Granulated White Sugar
  • 1 and 1/2 Tsps or 6g of Baking Powder, Sifted
  • 1/4 Tsp or 1.4g Table Salt (Optional)
  • One Large Egg
  • 3/4 Cup + 1 Tbspn or 200ml of Milk
  • 1 Tsp or 5ml of Vanilla Essence
  • 2 Tbspns or 30ml of Melted Butter
  • + Extra melted butter for greasing pan (total I melted 60ml inclusive of the 30ml for pancakes)
  • 3 Bananas, chopped
  • Raspberries and honey, to garnish

Instructions

  1. Mix together your dry ingredients (flour, sugar, baking powder, and salt).
  2. Then create a well in the centre and pour in egg, milk, vanilla, and melted butter.
  3. Whisk it together until it achieves a single consistency and set aside for 10 minutes. In the meanwhile, chop the bananas to slices of about 0.5cm – 1cm thick. Give the batter a little whisk once ready to cook
  4. On medium low heat, coat the frying pan with butter, heating it until melted. Then, dip each banana slice into the pancake batter and transfer to your frying pan.
  5. Cook approximately 2.5 minutes on each side, flipping the first time once bubbles are observed.
  6. Serve and garnish with berries and honey! Enjoy!
