Meet my new tea time best friend – these Easy, Eggless Earl Grey Cookies. Each of these comes an amazing tea-infused aroma and flavour, with an extra layer of fragrance from the chopped lavender buds I added in (optional, and up to preference)! And of course, before anyone would ask because I will too, yes these are the crunchy type of cookies! Which by the way, stores well for weeks making great gifts.

The most amazing thing about these Easy Eggless Earl Grey Cookies? Just 5 ingredients (6 if using lavender), and you can use tea leaves straight from the tea bag!

My inspiration behind these Easy Eggless Earl Grey Cookies come from the queries I received from my Green Tea Shortbread Cookies. Particulary, many people asked if they could use Earl Grey as a direct substitution in the recipe, and yes you can! As such, I thought to share the Earl Grey version for the record as well. Naturally, I thought this recipe being egg-free also makes it especially vegetarian friendly (especially for the gift aspect).

Now, there are also some additional pointers I would like you to note before embarking on this recipe!

  1. Feel free to amend the amount of earl grey used. Depeding on your personal preference, you can consider using 2 tea bags or even 4. I would recommend 3 if you’re feeling unsure!
  2. Refrigeration helps develop flavours. You will notice a 20 minutes refrigeration period which I’ve explained, helps to make the dough much easier to roll and work with. However, an important note is that this will also help to infuse the earl grey (and lavender) flavours, allowing you to have much more flavourful cookies!
  3. You can adjust the portion of the recipe. This recipe makes at least 60 – 70 cookies. Feel free to half it if you’re still shopping around for recipes, or multiply it if you’re making for a bake sales or for gifting.

Easy Eggless Earl Grey Cookies Recipe

Meet my new tea time best friend – these Easy Eggless Earl Grey Cookies that are also so nicely crunchy and absolutely flavourful!

Ingredients

  • 1 Cup or 225g Butter, Unsalted
  • 1 Cup or 120g of Powdered Sugar, Sifted
  • Pinch of of Salt (Optional)
  • 1 Tsps or 5ml of Vanilla Essence
  • 1/2 Tsp of Chopped Lavender Buds (Optional, to adjust)
  • Tea leaves from 3 Earl Grey Tea Bags (You can adjust to 2 or 4 bags!)
  • 2 and 2/3 Cup or 300g of All-Purpose Flour, Sifted (+ More for rolling)

Instructions

  1. Cream together the butter and powdered sugar until well-combined (about 2 minutes).
  2. Next, whisk in the vanilla, salt, earl grey tea leaves and crushed lavender buds (if using).
  3. Fold in the sifted flour.
  4. Then, chill the dough for at least 20 minutes for the earl grey tea flavours to be even richer and so that the dough is easier to work with.
  5. Subsequently, roll out the batter between two sheets of parchment paper; flour if you need to.
  6. Next, use your cookie cutters to make your desired shapes.
  7. Once done, bake at 180 degrees C for 10 mins to 13 mins or until browned around the edges. You might have to adjust the baking time accordingly depending on how big your cutters are.
  8. Then, let cool for 10 minutes before serving!

  • Yield: 60 Mini Cookies (dependent on size of cookie cutters!)

Notes:

  2. The cookies store well alone store well for up to 3 weeks at room temperature; however, timing might differ depending on factors such as humidity. Best to use a dessicant and airtight containers. If chocolate coated, make sure to store it in the refrigerator!
