These Banana Muffins with Granola Topping are soft and fluffy, with a rich, nutty crunch! Topped with either home or ready-made granola, these muffins are so easy to come together for the heartiest breakfast you will love waking up to.

A good question at this juncture would be, well, I already have so many Banana Muffin recipes, what makes this one different? Thus far, all of my Banana Muffins are accompanied with fillings such as chocolate chips and peanut butter.

Hence, these Banana Muffins with Granola Topping are the perfect base recipe you can use. Furthermore, they are extremely easy to come together, and easily customizable to your likes! Nonetheless, plain ol’ Banana and Cinnamon stated in this recipe work well too!

For my choice of granola, I picked a fun flavour which I have been having: Maple with Almond and Coconut. I got them from a local company, Revive Nutrition, and am glad to be supporting their mission in introducing healthier food. Beyond that, their granola taste amazing!

Banana Muffins with Granola Topping Recipe

A hearty, effortless breakfast, these Banana Muffins with Granola Topping hit the right notes with its fluffiness accompanied with crunch and nuttiness!

Ingredients

  • 1/3 Cup or 80g of Unsalted Butter, Melted and Cooled
  • 1/2 Cup or 100g of White Sugar (You can use less too, for example 60g or 80g)
  • 1 Cup and 2 Tablespoons or 140g of All-Purpose Flour / Plain Flour
  • 1 Large Egg, approx 55g each incl. shell
  • 1 Teaspoons or 5ml of Vanilla Essence
  • 1 and 1/4 Teaspoons or 5g of Baking Powder
  • 1/2 Teaspoon or 2g of Cinnamon Powder
  • 1/4 Teaspoon or 1.4g of Table Salt
  • 2 Medium Bananas (150g w/o skin/peel)
  • 1/2 Cup or 120ml of Milk, Room Temperature
  • 1/3 Cup or 50g of Roasted Nuts (optional)

Instructions

  1. Pre-heat your oven to 180 degrees C or 350F and line your muffin tin with paper liners.
  2. In a large mixing bowl, mix together the butter and sugar until well incorporated (approx. 2 minutes).
  3. Subsequently, whisk in the egg, salt and vanilla until it is of a single consistency.
  4. Then, mix in the milk and mashed bananas.
  5. Using a separate bowl, mix together the remaining dry ingredients (flour, cinnamon powder and baking powder).
  6. Fold in well until a single consistency is achieved.
  7. Then, distribute the batter evenly to approx. 10 muffin cups (2/3 full). Following which, top it with granola (or a mixture of oats, melon seeds and roasted nuts. Alternatively refer here for the granola recipe I have).
  8. Bake for about 20 – 24 minutes or until golden brown.
  9. Finally, let it cool for about 20 minutes before serving and enjoying!
